In celebration of World Vegan Day on Friday 1st November, the Bedford Lodge four Red Star luxury hotel and wedding venue in Newmarket, Suffolk will be running a special edition, three-course vegan menu.

Created by the wedding venue's award-winning executive head chef Sean Melville, the menu includes a variety of traditional dishes with a modern flair. To start, guests can choose from scrambled tofu with garlic mushrooms, avocado and coriander purée, sour dough crostini, a chipotle and chickpea hash, or a chilled beetroot soup.

The main course selection features such delights as the Bedford Lodge burger, a plant-based treat with avocado, roasted pepper and hand-cut chips, a hummus and quinoa superfood salad and a salt-baked celeriac and wild mushroom risotto.

The decadent dessert selection includes warm banana and cinnamon loaf with caramelised bananas and raspberry sorbet and a chocolate torte with mixed berry compote and a taste-bud tantalising pineapple sorbet.

Chief executive Noel Byrne comments,"At Bedford Lodge Hotel & Spa, we run a variety of themed food menus throughout the year which allow the kitchen team to experiment with new flavours and provide an original and exciting dining experience for guests. We offer a variety of popular vegetarian and vegan options on our regular menu, and the team has enjoyed the opportunity to create some exciting new recipes in celebration of World Vegan Day. We are looking forward to showcasing the diversity and deliciousness of vegan food with our new special menu, while catering for all guests' dietary needs."
